This concept picture has all the tape points to make the knife flip. All you have to do is build an appropriate blade and handle.

I started building more of those basic longswords. V2 has foam tips adding to the overall strength of the end of the sword, and also allowing me to fasten the blade foam to the sword more securely. These extra design changes make the sword overall stronger and safer. The handles are widened with cardboard slips, which are wrapped in tape and then taped to the handle, then finally covered in cloth clothesline. This makes a fairly firm grip that isn't going to wear out easily and yet is quite comfortable!
